There are kits on the market to do that. You have to search monkey-bike and pit-bike tuning shops, or just google something like "manual clutch conversion".
Here's one example. This is from a monkey shop in the UK and it includes everything you'll need, even the hand lever and cable, although it's not shown in the pic. The price quoted is £95.

If you go with genuine Honda parts the cost becomes much higher, for example just a genuine Honda clutch cover is £95:

You can also get prestigious brand items, like Takegawa kits, but these are prohibitely expensive.

It may be easier to just buy a complete hand clutch engine from somewhere like ebay. Try an ebay search for "Lifan engine". Lots come up with reasonable prices and in the US.

The suggestion of swapping a manual engine would make alot fo sense unless you really want to mod the one you have.

If you want more power then you might as well go ahead a buy a 125cc manual shift and bolt it in.

You may be able to find used parts on ebay too.

That is a great deal on a 125. Definately to best option. Swap that in and sell the the 110 auto.
