So three strategies. I'm a total offroad noob myself so I can't talk about specific bikes, just goals.

Buy something cheap to learn on and that you can beat up without too much remorse. Then move up to $$ or $$$.

Spend a bit more to get something you can upgrade or is good enough as is for both a complete beginner and someone moderately experienced. Perhaps the most practical option for most people.

Buy once, cry once. Get the bike you want to end up with. Cheapest option in the long run, because you only bought one bike.
