I would remove both items. The hose above the exhaust introduces extra oxygen for the cat, and the cat is likely behind the heat shield.

I once removed a cat before I blocked off the port on the head, and was rewarded with a large BANG upon deceleration. Quite funny.

Once you remove the cat and block off the plate, you'll need larger jets to compensate.

Also engine oil, my local shop has 10w-40 & 20w-50 and the manual doesn't really specify.

I was thinking to go with the 20w-50, any input?

I would only use the 20W/50 motor oil in the summer. In general, I would prefer 10W/40 motor oil to 20W/50 motor oil for a motorcycle. Personally, I use 15W/40 motor oil in all my motorcycles, and it does an excellent job.

For me, it's 15W40 all the time. That said, the area I live in rarely drops below 0C / 32F.

Hi and Welcome. I also use 15W/40 on my V-ratpor 250 and have the oil changed about every 1000 kilometers and clean the oil screen - Since this bike has no oil filter. I also have the valve clearance checked every 2000 kilometers. Here I've posted a few review videos and mods on youtube http://www.youtube.com/vn800power
For now I have decided not to change anything on the muffler/Cat, air box or carburetor since the bike runs well. I have put some oil on the air filter though, since its comes dry from the factory. My moto is: never change a running system (bike)!. So if I want more power I just hop on one of my other bikes.

On my bike I've mounted a flame cover over the cat. I haven't tried it, but theres a good chance the original Suzuki muffler might fit. This one has no cat in it.
