It sure would help on the low end. How much? not sure but will be better.

Awesome thanks for posting the video! As far as the brake squeal. A lot of these Chinese bike's brake pads don't have the anti squeal plate on attached to the back of the pads backing plate. Try going to an auto parts store and picking up a little packet of disk brake pad lubricant. They usually have it on a rack up by the registers. Then remove the brake caliper, pop the brake pads out and put the lubricant on the back of the pads. The side OPPOSITE of the brake rotor.

I've been able to get rid of some squeals by using a pencil on the rotor. Draw waves on both sides of the rotor with the softest pencil you have. Just brake normally after.

Unless you have a very steep driveway, 125cc is plenty. Do you have the throttle limiter applied?

The quad will still pick up momentum and go pretty fast with limited throttle travel (which is all the screw does). You are correct with the screw out it just gets up there quicker. My son's 110 quad was scary fast as small as it was!

Alaina is doing very well! I particularly liked her application of reverse.
Perhaps the throttle limiter screw isn't quite long enough to limit the throttle as much as you'd like. Does it feel like the throttle is barely opening?
