Yup, the baffle slipped right out when i took the three screws off the back..
That's cool! "Mod-able"! On the Hensims, no baffle at all was a wee loud for me but more importatly, it wouldn't pass the coat hanger test at our local OHV park by the Rangers without it, so I ended up modifying the baffles by drilling the holes larger and then wacking some of it off. It still passed the coat hanger test and sounded about half way between stock and no baffle. It also helped the performance by less restriction. Not gobs, but the throttle response was definitely quicker and it seemed to breath better at WOT. Mind you, they were just little 150's so it wasn't earth shattering, but you take what you can get.

Hmmm! I wonder if the baffle in the TT250 is going to be removable , since it shares tons of parts with a Hawk?

Mine were similar but smaller. A 3/8" drill bit did wonders to the side screening.

carb dialed in

so i took the advise from here and got myself a mikuni or at least a knock-off.
The carb is dialed in and works great, no coughing or sputtering. only 300 miles on it right now so still some break in but it's running much better.

things to work on:
Fork oil change.
there is a tiny fraction of play in the neck . I need to figure that out.
I still don't like the side to side play of the front sprocket; although everyone says it's fine.

Thanks to all who are so helpful and providing links to parts/technical threads and videos.
