Is there an air box mod delete where I can just put a air filter on the back of the carb? Seems like that would be easier after everything is said and done. How do your mean shoot the gas into the back? With what exactly?

Try a squeeze bottle ,I have an old mustard bottle with gas in it ,squeeze it in the rear of the carb .

buy a can of engine start... spray it in the the air cleaner as you
crank the motor over with the starter... ..

ok so i got it started. I have some experience with engines, but no not a whole lot. I cant get the idle down lower though, its either so high something starts to rattle or its to high without rattle. i know that seems a little confusing. in videos ive seen from motocheez it seems very quite, is that just the video?

To butt my 2 cents in, but this sounds an awful lot like either a vacuum leak or a mechanical issue with the carb. You said that you looked at the carb. How in depth did you delve into it? Also, when you say you hear a rattle, are you able to pinpoint where the rattle comes from?

Any vacuum leak that would cause idle issues would happen at or after the throttle slide. I know that there have been a few cases of carb and/or intake manifold O-Rings/Gaskets that were torn or damaged in some way from the factory.
Did you clean and blow out all of the passages in the carb when you took it apart? I've seen clogged air jets cause issues like this. Very common issue with Goldwings when they sit because their passages are so small. The only other thing I can think of off the top of my head is a bad seal around the main or pilot. The main jets emulsion tube has an O-ring seal. Maybe that little guy got damaged in some way.

one more thought before i go for the night, could the throttle not having any play in it have anything to do with it? Im sure there is supped to be like an 1/8th or 1/4, right?

Yes! If that slide is being held open a bit, it would definitely cause it to "idle" high. You may have just found your problem.
